Beef stroganoff: a recipe that’s both classic and delicious! • Prep time: 20 minutes • Cooking time: 50 minutes • Serving size: 4 servings Ingredients • 1 lb beef, cut into strips • 4 tbsp butter • 1 large onion, chopped • 2 packages (227 g each) mushrooms, sliced • ¾ cup white wine • 3 cups beef broth • 1 cup sour cream • 1 can (284 mL) cream of mushroom soup • 2 tbsp tomato paste • 1 tbsp Dijon mustard • Pinch of paprika • Salt and pepper • All-purpose flour • Egg noodles, to serve Preparation 1. Melt 2 tablespoons of butter in a large pot over medium heat, then sauté onion and mushrooms for 5 minutes. Set aside on a plate. 2. Season beef strips and toss in flour. 3. Melt 2 tablespoons of butter in the same pot over high heat and sear the beef strips. Set aside on another plate. 4. Deglaze the pot with the white wine, then add the beef broth, sour cream, cream of mushroom soup, tomato paste and Dijon mustard. 5. Bring to a boil, reduce heat and simmer for 15 to 20 minutes. 6. Add beef strips, onion and mushrooms and continue cooking for 15 to 20 minutes. 7. Sprinkle with paprika and serve with egg noodles. Beef and carrot stew Ingredients • 2 tbsp olive oil or more for cooking • 2 pounds stewing beef cubes • 2 tbsp butter • 1 can of beef broth (900 mL) • 8 carrots, cut into 1 inch pieces • 3 tbsp flour • 2 tbsp tomato paste • 1 tbsp old-fashioned Dijon mustard • 1 cup of red wine • 1 large onion, finely chopped • 3 cloves garlic, finely chopped • 1 tbsp finely chopped fresh rosemary • 1 tsp fresh thyme leaves • Salt and pepper to taste Preparation 1. Place rack in the centre of the oven and preheat to 350°F. 2. Brown beef cubes on each side in a pan with olive oil. Season with salt and pepper and transfer meat to a plate. 3.
