GRILLED BEEF FLANK STEAK WITH HERB BUTTER AND CARAMELIZED ONIONS BY CHEF JONATHAN MAYER
Preparation time: 45 minutes
Meat:
2 flank steaks, 225g
Ingredients:
1 tbsp olive oil
Salt and pepper
Herb butter:
1/2 cup room temperature butter
1 tsp chopped tarragon
1 tsp chopped chives
1 tsp chopped thyme
1 tsp chopped rosemary
Salt and pepper
Caramelized onions:
2 white onions, thinly sliced
2 tbsp butter
1 tbsp balsamic vinegar
Instructions:
Brush your flank steak with oil, add salt and pepper.
Cook to your ideal temperature, set aside.
In a bowl, mix the ingredients for the butter, put in a Ziploc bag, form a disc shape and put in the freezer for at least 30 minutes.
Cook the onions over low heat for about 20 minutes, add the balsamic vinegar and continue cooking for 5 minutes.
When ready to serve, heat the flank steak in a frying pan over high heat, place on top of the caramelized onions, add a slice of butter and let it melt.
