1 lb cubed beef shoulder roast
1/2 cup carrots, cut into chunks
1/2 cup onion, coarsely chopped
1/2 cup new potatoes, cut in half
3 cloves garlic
1 bunch fresh thyme
2 cups beef broth
1 Guinness (550 ml)
Salt and pepper
Preheat oven to 350 degrees.
Mix all ingredients, cook in oven for 3 hours or until meat flakes with a fork.
*For a thicker sauce, use cornstarch; add a little water for a smoother sauce.
