BACON JAM BY CHEF JONATHAN MAYER

Bacon: 1 lb bacon cut into large pieces Ingredients: 1/4 cup chopped onion 1 tbsp olive oil 1 tbsp chili flakes 1/2 cup coffee 1/2 cup brown sugar 1/4 cup maple syrup Instructions: Heat shallots and onion until translucent. Add bacon, cook until it starts to crisp up. Add remaining ingredients. Simmer for 20 to 30 minutes until smooth. Add to your favorite bread along with scrambled eggs. Enjoy your meal.
