CHICKEN BREAST WITH BACON BRUSCHETTA BY CHEF JONATHAN MAYER
Preparation time: 30 minutes
Meat:
4 chicken breasts
Ingredients for the chicken marinade:
4 tbsp olive oil
4 tbsp balsamic vinegar
Salt and pepper
Bruschetta:
2 tomatoes, diced
2 green onions, chopped
1 red onion, chopped
2 tbsp basil, chopped
1 clove of garlic, chopped
3 tbsp olive oil
3 tbsp balsamic vinegar
1/4 cup cooked bacon (crispy)
Instructions:
Mix the marinade ingredients with the chicken, let rest 5 minutes.
Cook your chicken on the barbecue on indirect heat for 20 to 25 minutes.
Mix the ingredients for the bruschetta and season with salt and pepper to taste.
Serve the chicken with a salad or your favorite side dish.
