HERCULES POKE BOWL BY CHEF JONATHAN MAYER

Preparation time: 30 minutes Meat: 4 chicken breasts Ingredients: 4 cups cooked brown rice 1 cup diced cucumbers 1 cup diced tomatoes 1 cup diced red onions 1 cup corn kernels 1 cup feta cheese 4 tbsp Renard barbecue sauce 1/2 cup mayonnaise 1 tbsp smoked paprika 1 tbsp onion powder 1 tbsp garlic powder 1 tsp sriracha Salt and pepper Instructions: Mix 2 tablespoons of Renard barbecue sauce, onion powder, paprika and garlic powder with the chicken, let marinate for a minimum of 30 minutes. In a skillet over medium heat, sear the chicken for 2 minutes on each side and finish cooking in the oven at 350 degrees for 25 minutes. Mix mayonnaise with remaining barbecue sauce and sriracha. In a bowl, add toppings to one cup of rice, top with barbecue sauce. Enjoy your meal.
