Preparation time: 35 minutes
Meat:
1 lb pork shoulder, cut into thin slices
Ingredients:
1/2 cup brown sugar
1 cup water
2 tbsp grated fresh ginger
2 cloves garlic, minced
1 French shallot, chopped
2 tbsp olive oil
2 tbsp fish sauce
Salt and pepper
Instructions:
Marinate pork in garlic, ginger, olive oil and a pinch of salt and pepper.
Marinate for 15 to 30 minutes.
In a pot, add the brown sugar with a little olive oil.
As soon as the brown sugar is melted like a caramel, add the pork, cook for 5 minutes, add the water and the fish sauce.
Simmer for 20 minutes.
Add the French shallot, continue cooking until the liquid reduces and becomes caramelized. Serve on basmati rice with green onions.
