FRIED CHICKEN AND WAFFLES BY CHEF JONATHAN MAYER

Meat: 4 chicken thighs Marinade: 1 cup buttermilk 1/3 cup pickle juice 1 tbsp paprika 1 tbsp onion powder 1 tbsp garlic powder 1 tsp Renard Texan spices Salt and pepper Dry breading: 1 cup flour 1/4 cup cornstarch 1 tbsp paprika 1 tbsp chili powder Salt and pepper Jalapeno honey: 5 tbsp honey 1 tsp finely diced jalapeno 1/2 tsp Sriracha Instructions: Mix all the ingredients for the marinade with the thighs and marinate for at least 3 hours. Mix the ingredients for the dry breading and set aside. Dip thighs in dry breading. Heat canola oil to 325 degrees and fry one piece at a time, for 10 to 15 minutes. Combine flavored honey ingredients, microwave for 1 minute. Garnish waffle, drizzle with jalapeno honey and enjoy. Enjoy your meal.
