ASIAN-STYLE PORK TACO WITH PINEAPPLE SALSA BY CHEF JONATHAN MAYER

Preparation time: 30 minutes Cooking time: 8 hours Meat: 1 pork shoulder, about 2 lbs Ingredients: 2 tbsp olive oil 1/3 cup soy sauce 1/4 cup Thai chili sauce 1 tbsp sambal oelek 1 1/2 cups hoisin sauce 1/3 cup maple syrup 2 tbsp rice vinegar Tortillas Salsa ingredients: 2 cups pineapple, cubed 1/2 cup cilantro, chopped 1 green onion, chopped 1 jalapeno, finely diced 1/4 cup olive oil 2 tbsp honey 1 red onion, diced Juice and zest of 1 lime Ingredients for slow cooker spice rub: 1 tbsp salt 1 tbsp garlic powder 1 tbsp onion powder 2 tbsp brown sugar 1 tbsp smoked paprika 1 tbsp ground ginger Instructions: Preheat your slow cooker on low, coat the pork with the spice rub. In a bowl, mix all the ingredients for the sauce, pour it into the slow cooker with the pork shoulder, cook for a good 8 hours or until the meat flakes. Mix the ingredients for the salsa, set aside. For a thicker sauce, mix 2 tablespoons of cornstarch in 1 tablespoon of water to thicken the sauce. Garnish your tacos.
