TUNA POKE BOWL BY CHEF JONATHAN MAYER
Preparation and cooking time: 15 minutes
Meat:
1 lb of red tuna
Ingredients:
2 tbsp Thai chili sauce
1 tbsp spicy mayonnaise
Garnishes:
Sushi rice
Cubed pineapple or mango
Cubed cucumber
Carrot, julienned
Red cabbage
Instructions:
Mix the tuna with the 2 sauces and let marinate for 10 minutes.
In a bowl, add the sushi rice, the garnishes and finish with the tuna.
Enjoy your meal.

BEEF TARTAR CHEF MAYER STYLE
Preparation and cooking time: 15 minutes
Meat:
1 lb of beef tartar
Ingredients:
2 tbsp. spicy mayonnaise
2 tbsp teriyaki sauce
1 tbsp chopped green onions
1 tbsp chopped parsley
1 tbsp store-bought fried onions
1 tsp steak spices
Instructions:
Mix all ingredients together. Adjust seasoning and mayonnaise amounts if the mixture is not homogeneous enough.
Enjoy your meal.

SALMON TARTAR BY CHEF JONATHAN MAYER
Preparation and cooking time: 15 minutes
Meat:
1 lb of salmon
Ingredients:
2 tbsp cubed cucumber
1 tbsp chopped green onion
1 tbsp chopped parsley
1 tbsp tempura
2 tbsp Wafu sauce
Salt and pepper
Instructions:
Mix all ingredients, adjust to desired consistency, season with salt and pepper.
Serve with fried wontons.
Enjoy your meal.
