PARSLEYED BASEBALL STEAK AND GREEN BEANS BY CHEF JONATHAN MAYER
Preparation and cooking time: 20 minutes
Meat:
1 lb of baseball steak, diced
Ingredients:
1 lb green beans, blanched and trimmed
1 tbsp olive oil
3 cloves garlic
1 tbsp mustard seeds
4 tbsp chopped flat leaf parsley
3 tbsp butter
Salt and pepper
Instructions:
In a frying pan on high heat, heat oil and brown meat cubes, cook for 3 minutes.
Add remaining ingredients except for the parsley, reduce heat and continue cooking for 6 minutes.
Add the parsley when dressing the dish.
Enjoy your meal.

SHRIMP CEVICHE BY CHEF JONATHAN MAYER
Preparation time: 20 minutes
Maceration time: 3 hours
Meat:
1 lb raw pink shrimp, deveined and peeled
Ingredients:
1 red bell pepper, diced
1 yellow bell pepper, diced
1/2 red onion, diced
2 tbsp chopped chives
2 tbsp chopped coriander
Juice and zest of 3 limes and 3 lemons
1/2 tbsp paprika
1/4 tbsp ground cumin
Salt and pepper
Instructions:
Mix all ingredients together, leave to macerate for at least 3 hours.
Enjoy your meal.

GRILLED OCTOPUS BY CHEF JONATHAN MAYER
Preparation and cooking time: 15 minutes
Meat:
1 package of cooked octopus
Ingredients:
2 tbsp capers
1 Lebanese cucumber, thinly sliced
2 radishes, thinly sliced
Juice and zest of one lemon
1 tbsp white wine vinegar
A drizzle of good olive oil
Salt and pepper
Ingredients:
Grill octopus on each side for 2 minutes on high heat.
Assemble on a serving plate, spreading out the octopus, cucumbers and radishes.
Add capers and lemon zest, drizzle with olive oil, white wine vinegar and lemon juice.
Enjoy your meal.

BACON JAM BY CHEF JONATHAN MAYER
Preparation and cooking time: 20 minutes
Meat:
1 lb of bacon, coarsely cut
Ingredients:
1/4 cup chopped onion
1 tbsp olive oil
1 tbsp chili flakes
1/2 cup coffee
1/2 cup brown sugar
1/4 cup maple syrup
Instructions:
Heat up onion until translucent.
Add bacon, cook until it begins to crisp.
Add remaining ingredients.
Simmer for 20 to 30 minutes until reaching a smooth texture.
Blend in a food processor.
Enjoy your meal.
