The term wagyu refers to several breeds of Japanese cattle. The term wagyu results from the juxtaposition of two words: of, "Japan" and gyū, " beef ". These breeds come from Japan where they separated into several genetic lines (red and black) because of the relief and the impossibility of transporting livestock in a feudal country often at war. They were originally bred for their power and strength in agricultural work. Today, animals are fattened intensively in order to develop muscle mass.
