What is that?
Flank steak is increasingly popular in Quebec. It is a part of the sirloin, a side piece of the belly whose flesh is long, stringy in texture, denervated and very tender which makes it a very tasty piece of meat.
Flank steak is usually served with lively cooking in a very hot pan for a few minutes on each side. It is often served with c œur rarer or even blue (raw) for more taste.
The stringy texture of the flank steak becomes tough if the meat is served medium-rare. We therefore prefer to serve it at its best, slightly rare, for more taste!
