What is it?
Beef flank steak is becoming more and more popular in Quebec. Part of the sirloin, a side piece of the belly with long, stringy, denervated and very tender flesh, it is a very tasty piece of meat.
Flank steak is usually served after being flash cooked in a very hot pan for a few minutes on each side. It is often served with a rare or even very rare (almost raw) centre for added flavour.
The stringy texture of the flank steak becomes tough if the meat is served medium. It is therefore preferable to serve it at its optimal temperature – slightly rare – for a better taste!
