What is it?
The brisket comes from the sternum of the animal and includes the muscles surrounding it. It is an extremely tasty, cartilaginous piece of meat. Brisket is one of the nine primary cuts of beef, although the definition of the cut differs internationally. Brisket muscles include the superficial and deep pectorals. Because cattle do not have a collarbone, these muscles support approximately 60% of their body weight when standing or moving. This requires a significant amount of connective tissue, so the resulting meat must be properly cooked to tenderize it.
