    What is it?

The ribeye is taken from the upper part of the lightly carved rib cage. Its fat marbling makes it the ideal choice for a quick, hot sear, which is why it is usually eaten grilled.

    The flesh of the ribeye is streaked with strips of fat, which give it unparalleled tenderness and succulence. 

    The name “ribeye” comes from the fact that the cut comes from the centermost part of the cow, or “eye,” which is the best portion of the rib steak with the bone removed.
