    What is it?

    Kansas City steak is the part of the T-bone without the tenderloin side, i.e. the bone-in strip loin. T-bone steak is a very popular meat and is suitable for quick, dry heat cooking methods, such as barbecuing or grilling. Because this steak has a small amount of collagen compared to other cuts, longer cooking times are not necessary to tenderize the meat. 

    There is some controversy as to whether the bone conducts heat into the meat. Some people think that the steak cooks more evenly and the bone prevents the meat from drying out and shrinking during cooking. Others believe that the meat near the bone cooks more slowly than the rest of the steak and the tenderloin will tend to reach the desired temperature before the strip. 

    Either way, when grilled properly on a BBQ, T-bone steak is a real treat and a steak lover’s delight!
