What is that?
T-bone beef steak is a very popular meat. T-bone is generally considered one of the highest quality steaks, due to its large size and the fact that it contains meat from two of the most prized cuts of beef (the short loin and the net).
You can easily recognize the T-bone by its shape: a T-shaped bone surrounded by meat. The steak indeed includes a “T” shaped lumbar vertebra with sections of abdominal internal oblique muscle on each side.
T-bone steak is suitable for quick, dry-heat cooking methods, such as barbecuing or broiling. Since steak has a small amount of collagen compared to other cuts, longer cooking times are not necessary to tenderize the meat.
There is some controversy as to whether bone conducts heat in meat. So some believe that the steak cooks more evenly and the bone thus prevents the meat from drying out and shrinking during cooking. Others conversely think that the meat near the bone cooks slower than the rest of the steak and the tenderloin will tend to reach the desired temperature before the strip.
