What is it?
T-bone steaks are a highly prized meat. The T-bone is generally considered to be one of the highest quality steaks, due to its large size and the fact that it contains meat from two of the most prized cuts of beef (short loin and tenderloin).
This cut is easily recognizable by its shape, consisting of a T-shaped bone surrounded by meat. The steak has a “T” shaped lumbar vertebrae with sections of internal abdominal oblique muscle on each side.
T-bone steak is suitable for quick, dry heat cooking methods such as barbecuing or grilling. Because this steak has a small amount of collagen compared to other cuts, longer cooking times are not necessary to tenderize the meat.
There is some controversy as to whether the bone conducts heat into the meat. Some people think that the steak cooks more evenly and the bone prevents the meat from drying out and shrinking during cooking. Others believe that the meat near the bone cooks more slowly than the rest of the steak and the tenderloin will tend to reach the desired temperature before the strip.
Either way, when grilled properly on a BBQ, T-bone steak is a real treat and a steak lover’s delight!
