Medium weight AAA beef rib steak, 567 g each, without added hormones. The pieces of meat are frozen under vacuum. 

What is that?

The rib steak, on the other hand, is not a piece of meat located between two ribs, it is actually a rib of beef from which the rib itself has been removed (that is to say, the bone ) and which has been cut in the edge to reduce its thickness. Thus, once freed from its bone and cut into the slice, a prime rib can produce two or three entrecotes, depending on the original width of the rib and the thickness of the entrecote desired by the butcher.
