What is this?

This fish is sought after and common on the stalls of fishmongers. The large size of halibut not only makes it possible to obtain large fillets without bones, but also to recover parts considered too small on other fish. The flesh, which is white and in large flakes, can dry out on the grill or pan, which can be prevented by not overcooking it, marinating it, breading it or encrusting it during cooking. Fillets can also be smoked.
