PORK SKEWERS BY CHEF JONATHAN MAYER
Meat:
1 lb cubed pork
Ingredients:
1 tsp garlic powder
1 tsp onion powder
1 tsp mustard powder
1 tsp chili flakes
1 tsp dried oregano
2 tsp crumbled feta cheese
1 tsp chopped fresh basil
Salt and pepper
Instructions:
Mix the meat with the spices, let marinate for a minimum of 1 hour.
For the assembly, you will need zucchini, cherry tomatoes and peppers of your choice.
Cook on the barbecue for 10 to 20 minutes or until cooked to your liking.
Serve with rice or a vegetable papillote.
Enjoy your meal.

SHISH KEBAB BY CHEF JONATHAN MAYER
Meat:
1 lb cubed filet mignon
Ingredients:
1 cup plain Greek yogurt
1 tsp dried thyme
1/2 tsp ground cinnamon
1 tsp ground cumin
1 tsp onion powder
Salt and pepper
Greek salad:
1 cup of Lebanese cucumbers cut in 4
1 cup of cherry tomatoes cut in 4
1/4 cup chopped parsley
1/4 cup chopped red onion
3 tbsp olive oil
1/4 chopped dill
Salt and pepper
Instructions:
Mix all ingredients together.
Let marinate for at least 1 hour.
Barbecue on high heat for 15 minutes.
Garnish with Greek salad and Greek yogurt.
Enjoy your meal.

MEDITERRANEAN HOT DOG BY CHEF JONATHAN MAYER
Meat:
1 lb ground pork
Ingredients:
4 hot dog buns
1/2 cup chopped basil
1/2 cup cilantro
1 egg
2 tbsp smoked paprika
2 tbsp ground ginger
1 tbsp honey
1/4 cup peppers, diced
Garnishes:
Diced tomatoes
Feta cheese
Kalamata olives
Diced cucumbers
Cilantro
Tzatziki sauce
Instructions:
Mix all ingredients until smooth.
Shape into hot dog-sized sausages.
Cook on the barbecue for 15 to 20 minutes.
Assemble hot dogs with toppings.
Enjoy your meal.

BACON JAM BY CHEF JONATHAN MAYER
Bacon:
1 lb bacon cut into large pieces
Ingredients:
1/4 cup chopped onion
1 tbsp olive oil
1 tbsp chili flakes
1/2 cup coffee
1/2 cup brown sugar
1/4 cup maple syrup
Instructions:
Heat shallots and onion until translucent.
Add bacon, cook until it starts to crisp up.
Add remaining ingredients.
Simmer for 20 to 30 minutes until smooth.
Add to your favorite bread along with scrambled eggs.
Enjoy your meal.
